Ensure the Basmati Rice is soaked for 20 to 30 minutes, drain, and set aside. This is essential for making sure each grain will properly cook.
Slice the onions, slit the green and make the ginger garlic paste and keep them aside.
Firstly, in a cooker heat oil or ghee and add sliced onions and green chilies. Saute onions till they turn translucent.
Further add cloves, bay leaf, cinnamon stick and cardamom. Saute till they turn aromatic.
Next add ginger garlic paste and fry until the raw smell goes away.
Add green peas and give it a quick stir.
Now add the drained rice and saute for 3-4 minutes.
For making the rice more flavorful and soft, add a cup of thick coconut milk.
Add 3.5 cups water
Now add salt and stir well. The water must taste medium salty. Cover the cooker and cook on medium high flame for 1 whistle. Turn off and remove from stove immediately.
Once the pressure releases from the cooker, open and gently fluff using fork and serve hot with raita or any spicy gravy.
Conclusion
Addition of coconut milk is optional but it adds more flavor and makes the rice more softer.
